Pumpkin Cookies
Ingredients
1/2 cup shortening
1 cup sugar
1 cup pumpkin
1 teaspoon vanilla
2 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 & 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2-1 teaspoon ground ginger
1 & 1/2 cups butterscotch chips
Directions
Preheat oven to 350 degrees. Cream sugar and shortening together until light. Add pumpkin and vanilla, mix to combine. Sift dry ingredients together and add to pumpkin mixture. Stir chips in by hand. Scoop or spoon teaspoon size dough onto parchment lined pans. Bake 8-10 minutes.
Makes about 8 dozen
