Eggnog Cheesecake
Ingredients
3-8oz bars of cream cheese (24 oz total)
3/4 cup sour cream
3 eggs
1 egg yolk
1 cup sugar
3/4 cup eggnog
1 teaspoon vanilla extract
1 teaspoon rum extract
1/4-1/2 teaspoon fresh grated nutmeg
graham cracker crust
9 inch springform pan
Graham Cracker Crust
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
1/2 teaspoon cinnamon
1/4 cup mini chocolate chips (optional)
Directions
Crust
Combine all ingredients for crust in a bowl. Mix well to combine. Press into bottom and half way up sides of 9 inch springform pan. Set aside.
Cheesecake
Using an electric mixer beat cream cheese until light and smooth. Add sugar, mix to combine. With mixer running, add 1 egg at a time incorporating fully before adding next. Add egg yolk. Add remaining ingredients and continue beating for 10 minutes. Pour into prepared crust. Bake about 1 hour or until center is set. Let cool then refrigerate several hours. Release sides of springform pan.
Serves 12-16.
