Apple Crunch Salad

Ingredients
     3 Fuji apples, cored, diced with skin on
     3 ribs celery, diced
     ½ cup chopped walnuts
     ½ cup dried cherries (or cranberries)
     ½ lemon, juiced
     1 teaspoon orange zest
     ½ cup fat free vanilla yogurt

Directions
     Place chopped apples in a bowl.  Squeeze lemon juice on top. Toss to coat.  Add remaining ingredients, toss to combine.  Serve on a bed of lettuce.

     Serves 8
