Butterscotch Meltaways

1 cup butter
3/4 cup powdered sugar
1 egg yolk
1 tsp vanilla
1 cup coconut
1 1/4 cup flour
1/8 tsp salt
3/4 cup cornstarch
3/4 cup butterscotch chips
Red & green candied cherries, halved
Sugar

Preheat convection oven to 350 degrees.  Cream butter and powdered sugar, then add egg yolk, vanilla, and coconut.  Sift dry ingredients and add them to mixture, just incorporating.  Stir in butterscotch chips.  Scoop onto sheetpan.  Dip the bottom of a drinking glass in sugar, then press each cookie down, dipping glass before pressing each cookie.  Place a candied cherry half on each cookie.  Bake 10 - 12 minutes or until edges just begin to turn golden.
