Crab Cakes

1 pound lump crabmeat
1 egg
2 tablespoons mayonnaise
1 lemon, juiced
2 scallions, chopped
1/4-1/2 red bell pepper, diced fine
1/4 teaspoon cayenne pepper
salt and pepper
1/2-1 cup panko bread crumbs

Combine all ingredients except panko in a bowl.  Mix well. Incorporate panko until crab will hold together when formed into patties.  Form desired size crab cakes.  Brown on both sides in butter. 

 

Serves 4.
