Spinach & Goat Cheese Salad with Pepper Jelly Dressing

1 9- or 10- unce bag fresh spinach
1 4-ounce log goat cheese
1/2 cup toasted walnut pieces
Pepper Jelly Dressing (see recipe below)

Place spinach in a large salad bowl.  Slice goat cheese lengthwise in half and then in half again.  Cut each quarter into 6 pieces.  Sprinkle nuts and goat cheese on spinach then add dressing.  Toss to coat.  Season with salt and pepper. 

Pepper Jelly Dressing

1/3 cup pepper jelly
1/4 cup olive oil
1/4 teaspoon salt
1 teaspoon Dijon mustard

Whisk all ingredients together.

Can be topped with grilled chicken and served as meal.

Serves 4 - 6.
