Summer Corn and Tomato Salad with Herb Dressing
1 large ripe red tomato, large dice
1 large ripe yellow tomato, large dice
2 ears fresh corn (yellow, white or bicolor)
1 cucumber, diced *
Combine all ingredients in a bowl. Toss to coat. Adjust seasoning.
*If using garden cucumber, peel before dicing. If using store-bought cucumber, use English cucumber and leave skin on.
2 tablespoons snipped chives
1 tablespoon chopped fresh oregano
1 teaspoon fresh thyme
½ cup white balsamic vinegar
½ cup grape seed oil (or olive oil)
salt & pepper
Combine ingredients and refrigerate.
Makes about 4 servings.
