Summer Gluten Free Pasta

1 BOX QUINOA ROTELLE PASTA, COOKED AND DRAINED

2 – 3 GARDEN RIPE TOMATOES, DICED

2 CLOVES GARLIC, MINCED

¼ CUP FRESH BASIL, CHOPPED

1    8 OUNCE PACKAGE FRESH MOZZARELLA PEARLS

¼ CUP EXTRA VIRGIN OLIVE OIL

SALT & PEPPER

COMBINE ALL INGREDIENTS WHILE PASTA IS WARM.  TOSS TO COMBINE.  MAY BE SERVED HOT OR COLD.  (OPTIONAL) ADD COOKED CHICKEN OR SHRIMP.

SERVES 4.
