Chicken Apple Sausage
1 pound ground chicken
1 apple, peeled and diced
1 scallion, chopped fine
1 tablespoon canola oil
1 tablespoon fresh sage, finely chopped
½ teaspoon fennel seeds, toasted and chopped
2-3 teaspoons agave nectar
1 teaspoon salt
½ teaspoon pepper
Saute apples and scallions in canola oil until soft. Set aside to cool. In a separate bowl, combine ground chicken with remaining ingredients. Mix well to combine. Add cooled mixture to chicken and mix well.
Test a small pinch by cooking in a non stick pan. Taste and adjust seasoning. Form into 8 patties and cook in a non stick pan over medium high heat about 2-3 minutes per side. Internal temperature should be 170 degrees.
