BLUEBERRY MUFFINS

 

400 DEGREES

 

3 CUPS FLOUR

1½ CUPS SUGAR

1 TSP SALT

4 TSP BAKING POWDER

 

2/3 CUP OIL

2 EGGS

< 2/3 CUP MILK

2 CUPS BLUEBERRIES

 

TOPPING

1 CUP SUGAR

2/3 CUP FLOUR

½ CUP BUTTER

1 TBL CINNAMON

 

COMBINE DRY INGREDIENTS IN A BOWL.  COMBINE OIL & EGGS IN A 2 CUP MEASURE.  ADD ENOUGH MILK TO MAKE 2 CUPS.  ADD TO DRY INGREDIENTS, MIXING JUST TO BLEND.  FOLD IN BERRIES.  FILL MUFFIN CUPS 2/3 FULL.  COMBINE TOPPING INGREDIENTS MIXING WITH PASTRY BLENDER OR CUISINART UNTIL CRUMBLY.  TOP EACH MUFFIN WITH TOPPING & BAKE 20-30 MINUTES.
