HERB GRILLED CHICKEN WITH WATERMELON SALSA

6       6 OUNCE CHICKEN BREASTS

¼       CUP MIXED FRESH HERBS (THYME/OREGANO/ROSEMARY)

¼       CUP OLIVE OIL

          SALT & PEPPER

          LEMON JUICE (OPTIONAL)

USING A MALLET POUND CHICKEN BREASTS TO AN EVEN THICKNESS.

COMBINE REMAINING INGREDIENTS AND BRUSH CHICKEN BREASTS.

ON A GAS OR CHARCOAL GRILL OVER MEDIUM HEAT, GRILL CHICKEN 3-4 MINUTES PER SIDE OR UNTIL INTERNAL TEMPERATURE IS 170 DEGREES.

WATERMELON SALSA

2       CUPS WATERMELON, SMALL DICE

4       OUNCES FETA CHEESE, CRUMBLED

2       TABLESPOONS SNIPPED CHIVES OR MINT

COMBINE ALL INGREDIENTS IN A BOWL.  SERVE OVER CHICKEN.
