GLUTEN FREE ALMOND COOKIES

 

1          POUND SLIVERED ALMONDS

2          CUPS POWDERED SUGAR

2 ½     TEASPOONS VANILLA EXTRACT

2 – 3   EGG WHITES

GRIND ALMONDS IN BATCHES IN FOOD PROCESSOR UNTIL FINE.  COMBINE ALMONDS AND POWDERED SUGAR IN A BOWL.  ADD VANILLA EXTRACT TO EGG WHITES THEN ADD TO ALMOND MIXTURE.  USING HANDS, MIX WELL.  DOUGH WILL BE STICKY, IF TOO DRY ADD EXTRA EGG WHITE.  DROP BY TEASOON ONTO LIGHTLY GREASED PAN OR PARCHMENT LINED PAN.  PRESS DOWN LIGHTLY.  BAKE 350 DEGREES FOR 15 – 20 MINUTES OR UNTIL LIGHTLY BROWNED.
