Fresh Tomato Basil Soup

5 large tomatoes, peeled and seeded
1 cup vidalia onions, chopped
1 Tablespoon minced garlic
1 Tablespoon tomato paste
1/4 cup fresh basil, chopped
3 cups chicken stock
1 Tablespoon salt
2 teaspoons black pepper

4 strips of pecan-wood smoked bacon


In a medium-sized pot, render bacon until crisp. Remove the bacon and add the onions and cook until tender. ( Reserve the bacon). Add garlic, fresh basiltomato paste and fresh tomatoes. Cook on low heat for at least ten minutes.

Add chicken stock and bring the soup to a boil, lower heat to simmer uncovered for at least thirty minutes. The tomatoes should be tender. Salt and pepper to taste. Add bacon for additional flavor and serve with croutons or your favorite grilled cheese sandwich.
