Holiday Beets


1 (16 ounce) can sliced beets, drained

2 teaspoons lemon juice

1/2 teaspoon salt

1 tablespoon brown sugar

1 teaspoon cornstarch

1 tart green apple, peeled and sliced


  1. In a large skillet over medium heat, combine 1/2 cup of the beet liquid, lemon juice, salt, brown sugar and cornstarch. Mix well. 
  2. Cook, stirring, until thickened and clear. 
  3. Stir in beets and apple. 
  4. Reduce heat to low and gently simmer for 15 minutes.
