FETA, BASIL AND WATERMELON SALAD WITH PECAN CHAMPAGNE VINAIGRETTE 

 

DRESSING

1  SHALLOT

1/4 CUP CHAMPAGNE VINEGAR

1/4 CUP PECAN OIL

1 TABLESPOON DIJON MUSTARD

2/3 TEASPOON SALT

FRESHLY GROUND PEPPER TO TASTE

 

SALAD

1 (5lb) WATERMELON

1 CUP CHOPPED BASIL

1 CUP CRUMBLED FETA

 

IN A LARGE BOWL, WHISK SHALLOTS, CHAMPAGNE VINEGAR, PECAN OIL, MUSTARD, SALT AND PEPPER. ADD WATERMELON AND FETA, TOSS GENTLY. GARNISH WITH BASIL AND SERVE.
