Orange Grilled Chicken

6 chicken cutlets (breasts require longer cooking time)
2 cloves garlic, minced
2 oranges, juiced
zest of 1 orange
2 tablespoons canola oil
salt and pepper
olive oil cooking spray

Combine orange juice, zest, garlic, oil and salt & pepper in a zip lock bag.  Add chicken to bag and marinate several hours or overnight.  Remove chicken from bag, discarding marinade.  On a preheated grill pan sprayed with olive oil spray, or on an outdoor grill, cook chicken about 3-4 minutes per side or until you reach an internal temperature of 170 degrees.

Serves 6.
