Sweet Potato Souffle

Sweet Potato Souffle - Yields 8 servings

Preheat oven to 350 degrees

3 cups of sweet potatoes, cooked and mashed
1 cup of sugar
1/2 cup of milk
1/3 cup of butter
1 teaspoon of vanilla extract
2 eggs beaten
1/2 teaspoon of salt
Combine all ingredients; beat until smooth. Pour into a buttered 2-quart baking dish and bake at 350 degrees for at least 30 minutes. To avoid the sugar intake, no topping is required for this dish.
